Ultimate Beef and Bean Nachos
Happy Tuesday sweet friends! How are you? It has been a super busy week over here. With teaching and coaching full-time, I have not been able to be on here as much and connect with all you amazing people. My apologies to you for that, but such is life am I right? I have to constantly remind myself that I can’t do it all and to not be too hard on myself. Today, I am super excited to share a fun recipe for a weeknight meal. Ultimate beef and bean nachos are the best! The thing I love about this recipe is that you can add or take away so many items truly making it your own for your family.
Get your sheet pan and get ready to build these yummy nachos!
I started with some super fun chips that are shaped like leaves from Trader Joe’s. Aren’t they adorable? Cheers to Fall y’all!
I added refried beans in little dollops. You can use black or pinto beans if you’d rather. When using refried beans, I add a small amount of water to them to make them a little runnier. It makes it easier for them to spread.
After the beans, I added 1 pound seasoned ground beef. I use any store bought taco seasoning packet and prepare the meat according to the directions on the packet.
I love things a little spicy so I added jalapeño slices to the top of the meat. YUMMY!
I then used about 1 1/2 cups of cheese to cover the nachos.
I baked them on 400 degrees for about 15 minutes. Once they come out of the oven, you can add your toppings. Some great examples would be: shredded lettuce, sour cream, salsa, tomatoes, black olives and guacamole.
Speaking from one super busy Mom to another, this recipe is golden for those weeknights when you can’t think of anything to make for dinner.
