Scrumptious Back to School Breakfast Basics
Hey there friends! I thought it would be fun to compile some scrumptious back to school breakfast basics. I am always looking for quick breakfast ideas during the crazy week. And we all know that it is important for those cuties to get good nutrition for the day ahead.
The first recipe is compliments of Honey and Lime. It is a very simple make-ahead blueberry pancake bites. YUMMY, RIGHT?
Easy Make Ahead Blueberry Pancake Bites
Ingredients
- 2 cups Krusteaz Pancake mix
- 1 1/3 cups water
- 1 cup fresh blueberries
- 1 tbsp maple syrup
- splash vanilla
Instructions

Preheat oven to 350 degrees. Grease muffin tin. Mix together the pancake mix, water, maple syrup, and vanilla extract. Add blueberries by gently folding them in batter. Pour batter evenly in to 12 muffin tins. Bake 16-20 minutes.
The next recipe is from Julie’s Eats and Treats. It is a super easy and delicious egg and ham muffin dish. I make these all the time and I love that they are Keto friendly as well by subbing the milk for heavy cream.
Ham and Cheese Egg Muffins
Ingredients
- 12 eggs
- 1/2 cup milk
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 cup shredded cheddar cheese
- 1/2 cup diced ham
Instructions

Preheat oven to 350 degrees. Spray muffin tin with non stick cooking spray. In a large mixing bowl whisk together eggs, milk, salt and pepper. Stir in cheese and ham. Pour mixture into 12 muffins cups. Bake for 25 minutes or until muffins are set in the middle.
Who doesn’t love a good breakfast casserole? There are so easy to make the evening before and then just pop them in the oven when you get up. This one is from Happy Brown House and it is a Sausage, Egg, and Cheese Casserole.
Sausage, Egg and Cheese Casserole
A perfect overnight recipe that will surely please everyone!
Ingredients
- 1 lb Sausage cooked and drained
- 6 eggs beaten
- 5 slices of bread torn into pieces
- 1 tsp salt
- 1 tsp dry mustard
- 2 cups milk
- 2 cups shredded cheddar cheese
Instructions

Preheat oven to 375 degrees

Brown the sausage and drain the grease

Mix all the ingredients together

Pour into 9×13 casserole dish

Bake at 375 for 40 minutes
Recipe Notes
This can be made the night before and refrigerated. Then, the next morning just pop it in the oven.
