OSS Menu Monday-Mouth Watering Meatloaf
Happy Monday! Oh wait…..it’s Wednesday!! Anyone else’s days running together? LOL Well, lucky for you I have a recipe today instead of Monday. Today for OSS Menu Monday-Mouth Watering Meatloaf is going down! I feel like meatloaf has gotten a bad wrap over the years. Honestly, I can see why sometimes. I don’t know about you but back in my day, people used to put so much junk in it (by junk I mean vegetables). YUK! To me, the best meatloaf is plain and simple. So, today I am sharing a meatloaf that your WHOLE family will love!
To me, the least amount of ingredients=the best meatloaf!
So, first you are going to preheat the oven to 350 degrees. Spray a loaf pan with non-stick cooking spray. In a medium bowl, mix 2 eggs, 3/4 cup milk, and breadcrumbs. Do not over mix. Allow mixture to sit for a few minutes.
Combine 2lbs of 80/20 ground beef, 1 tsp Italian seasoning, 1/3 cup finely diced onion. Add breadcrumb mixture to the beef mixture and combine, do not over mix. Put mixture in the low pan and cook on 350 degrees for 40 minutes. While that is cooking, mix together 3/4 cup ketchup and 2 T. brown sugar.
After the 40 minutes, spread the ketchup topping over the meatloaf and return to oven for an additional 20 minutes.
Take meatloaf out of the oven and let it cool for about 10 minutes before cutting it.
I don’t know about you but, no matter how hard I try, I cannot ever get meatloaf to cut right. So, the picture isn’t great but boy is it delicious!!
My family tore it up y’all! The entire loaf was gone! Of course, I do have 2 grown boys that each eat for 5 people. LOL I served it with Bob Evans mashed potatoes and Sister Shubert’s yeast rolls. YUMMO!
Mouth-Watering Meatloaf
Delicious meatloaf that comes out juicy every single time you make it!
Ingredients
- 2 eggs
- 3/4 cup milk
- 1 teaspoon Italian seasoning
- 1/3 cup finely diced onion
- 2 lbs 80/20 ground beef
- 3/4 cup ketchup
- 2 tbsp brown sugar
- 3/4 cup breadcrumbs
Instructions

Preheat oven to 350 degrees.

Spray loaf pan with non-stick cooking spray.

In bowl combine eggs, milk and breadcrumbs. Set aside.

Mix ground beef, onions and Italian saesoning together then add to the breadcrumb mixture.

DO NOT overmix.

Put mixture in loaf pan and bake on 350 for 40 minutes.

While meatloaf is baking, combine ketchup and brown sugar and stir until mixed well.

After 40 minutes, take meatloaf out of the oven and top with ketchup sauce.

Return to oven and bake an additional 20 minutes.

Remove from oven and allow it to sit for 5-10 minutes.

I love a plain and simple meatloaf too! Sometimes we add mushrooms to ours because I love mushrooms haha but that’s the extent of adding extras! haha. Also, YES to all the days running together. Monday, Wednesday, Sunday….who knows at this point hahahaha
