It is my pleasure to feature another dear friend of mine and her Grandmother’s Recipe-Spinach, Bacon and Mushroom Quiche that has been passed down generations. Ashlee from The Sassy Barn shared this recipe with me and told me how her Grandmother used to make it for her all the time while she was growing up. When her Grandmother got sick, Ashlee would make it for her and take it to her home. Now, every time Ashlee makes it, she thinks of her late Grandmother. I just love stories like that and they are the very reason I decided to do these monthly recipe features. Happy eating my friends.
Grandmother's Spinach, Bacon and Mushroom Quiche
This mouth-watering quiche recipe will have you coming back for seconds.
Ingredients
- 4 eggs
- 1/2 cup milk
- 1/2 cup half and half
- 1 cup cheddar cheese
- 1/2 cup parmesan cheese
- 4 slices bacon, cooked and crumbled
- 1/2 cup sliced, cooked mushrooms in bacon grease
- 1/2 cup spinach
- salt and pepper to taste
- 1 pie crust
Instructions

Pre-heat oven to 400 degrees.
Cook your bacon and mushrooms together in a pan and then transfer to paper towel to drain the grease.
Crumble the bacon.
Add the bacon and mushrooms into a bowl.
Add in the eggs, milk. half and half, cheeses, spinach and salt and pepper.
Mix well.
Pour into a pie crust and bake for 55-60 minutes.
