Good morning friends! If you are coming over from Tiffany at Joyfully Rooted I am so glad you are here. I cannot wait to try her simple, fancy grilled cheese. Doesn’t it look amazing?

Today, I wanted to share one of our family’s very favorite weeknight meals. With my husband and I both being full-time teachers and coaches, we typically donā€™t get home until 7 PM each night during the week. So, in an effort to make things a little bit easier at the house when we get home, we created a few recipes that are our staples. Our quick weeknight taco casserole is a huge favorite. I love that you can just put all the ingredients together and it literally takes about 10 minutes. I also love that you can change it up each time just by changing a few simple ingredients. For example, sometimes I use regular Fritos as opposed to Chili Cheese Fritos. Another alteration I make from time to time is instead of refried beans I use black beans. Other times I completely cut out the corn. See what I mean? Itā€™s perfect because itā€™s so easy to change up.

Alright, are yā€™all ready to get into it? Letā€™s do it!

  • First thing you are going to do is brown the meat and onion. I double this recipe because we are a family of 6 so I use 2 lbs of meat.
  • Then you will drain the grease and then add water and taco seasoning. Simmer for a few minutes.
  • In 9×13 pan, place beans of your choice.
  • Add sour cream on top of the beans.
  • Add meat on top of sour cream.
  • Spread guacamole to the top of the meat.
  • Add drained can of corn.
  • Sprinkle one cup of shredded cheese then place in oven at 350 degrees for 15 minutes.
  • Take out of oven and add olives, tomatoes and fritos.
  • Place back in oven for additional 5 minutes.
  • Take out of the oven and then add lettuce and additional cup of cheese.
  • SERVE WARM!

Ingredients

  • 1 lb ground beef
  • 1 pkg taco seasoning
  • 1 tomato, diced
  • 1 can black olives, optional
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 can refried beans or black beans
  • 1 bag fritos, chili cheese or regular
  • 1 cup salsa
  • 1 container guacamole I use Holy Guacamole
  • 1/4 cup diced oinions
  • 1 pkg shredded lettuce
  • 1 can kernel corn, drained

Instructions

  1. Preheat oven to 350 degrees.

  2. Brown ground beef and onions together in skillet.

  3. Drain grease.

  4. Add 3/4 cup of water and 1 pkg of taco seasoning and simmer for 5 minutes.

  5. Spread refried beans or black beans on bottom of 9×13 baking dish.

  6. Spread sour cream over refried/black beans.

  7. Spread prepared ground beef mixture over the sour cream.

  8. Spread guacamole over the meat mixture.

  9. Layer the can of drained corn over the guacamole.

  10. Cover with 1 cup of the cheese.

  11. Bake for 15 minutes.

  12. Remove from the oven and add fritos, diced tomatoes and black olives to the top.

  13. Sprinkle remaining cheese on top.

  14. Return to the oven and bake an additional 5 minutes.

  15. Sprinkle lettuce on top.
